The nine stars of Bergamo

Lombardy remains the most starry region of Italy with 60 restaurants (2 *** 6 ** 52 *). Two Lombard innovations. A great classic of classic Bergamo gourmet cuisine. Securely guided by Paolo Frosio in the kitchen, with his brother Camillo to govern the imposing cellar and the exhilarating hall of the eighteenth-century house on three floors with an adjoining walled garden outside (and ancient tower where the precious bottles that make up the paper of the wines and distillates). The revelation man Enrico Bartolini, able to turn almost everything he touches into stars, has also laid his hand on Città Alta, but Marco Locatelli, a gritty young man who orchestrates the room naturally orchestrates the success and dizzying ascent. , and of the very young Alex Manzoni, certainly prodigious, who is pulling out his personality alongside the more classic Bartolini creations (which always remain on the menu). The environment is one of the most comfortable in the province. As fascinating in the evening as during the lunch, thanks perhaps to the immense windows from which you can see the funicular railway that arrives in San Vigilio. Who would have thought that one of the very few restaurants of molecular cuisine with an ever new and never stagnant momentum in Italy was in the Bergamo area. Technologies that often come from medical analysis laboratories - together with sonicators, vaporizers, centrifuges and ultrasonic baths - are common tools. The result is the farthest from a synthetic kitchen, indeed, the knowledge of suitable tools allows to enhance the taste of the raw material without ruining it. Try it at least once in your life.

Francesco Longhi and Antonio Rocchetti (from the initials of their surnames, the name of the restaurant) have succeeded in their personal enterprise: to create a place of welcome and good food where they can express themselves freely. They found it in a renovated country house that offers large spaces, divided into rooms and atmospheres that interact with each other and follow one another, passing from the restaurant to the bistro and from the open cellar to the party room. Essential but always recognizable the hand of the cook, as much as that of the director. He reached the star in 2011.

The history of the restaurant begins a generation ago, in the 1960s, when Beppe and Olga started the management, and the winning of the prestigious award was in 1990. Today the reins are in the hands of the children who commit themselves with passion to the philosophy of the simple and good that represents them for two decades. The strong point is the flavors of the sea with all their nuances expressed in a simple and very clear style: dishes never too elaborate, to enhance the value of each individual ingredient as much as possible
